I got a new small rice cooker (1 cup capacity) and I love it because it cooks super fast and it doesn’t take that much space on the kitchen counter. Every time I cook rice I try to add something different from spices to broths, other grains or vegetables. This time around I used oyster mushrooms that I got at the Saturday's Bellingham Farmers Market. I soaked the mushrooms and I cooked the rice with the mushrooms and the water where the mushrooms were soaked. I know that when you hear mushrooms and rice in the same frase the first thing that comes to your mind is risotto, but sorry this isn’t a risotto recipe, you will get a yummy, loosely and flavorful rice in minutes. I’ll make a risotto recipe soon, I love risotto! so, any excuse to cook creamy and flavorful rice is welcome.
Serves: 2 to 3 people Prep Time: 15 + mins
Cooking time: depends on the amount of rice that you are making
Ingredients:
A handful of dried mushrooms
1 cup brown rice
2 cups of warm water
½ teaspoon garlic powder
½ teaspoon onion powder
Salt
Pepper
Extra virgin olive oil
Directions:
With your hands break up a little bit the dried mushroom
Soak the dried mushrooms with the 2 cups of hot water for 15 to 30 mins. I recommend using the pot where you are going to cook the rice
After the desired time has passed add the rice
Add the onion powder, garlic powder, salt and pepper
Stir
Cook the rice
Once the rice is done serve with a drizzle of extra virgin olive oil and chopped parsley if you have some around
