We got Covid during my 3 yo birthday and even though we were pretty sick we needed a birthday cake. I didn’t have a small cake pan, I couldn’t go out to buy one and it was too late to order one online. I grabbed a small stainless steel pot, parchment paper and my pound cake recipe, and of course purple food coloring, because if the cake isn’t purple, pink or green isn’t a real birthday cake 🤪. I decorated the cake with some melted white chocolate and m&m’s. If you have around 4 to 5 people this size is perfect for a quick cake, it bakes fast and you don’t have a ton of leftovers.
Usually for my baked goods recipes I like to use whole wheat flour, and coconut sugar. Since I was adding food coloring to the batter I used all purpose flour and cane sugar, a lighter color batter works best when adding the food coloring.
Yield: 4 to 5 people Preparation time: 15 to 20 mins Cooking time: 20/25 mins
Ingredients:
1 + ⅔ cups of flour
¾ cup of sugar
3 teaspoons of baking powder
⅛ teaspoon of salt
6 tablespoons of avocado oil, olive oil or melted butter
½ cup of milk (I used almond milk)
1 teaspoon of vanilla
4 eggs
Directions:
Prepare a small cake pan or a stainless steel small pot with parchment paper
I using butter, melt the butter, I used avocado oil
In a bowl whisk all of the dry ingredients
Add the rest of the ingredients to the bowl
Mix well
If adding the food coloring add, and mix well
Fill the cake pan
Bake at 350 for about 20 to 25 minutes.
The best way to tell if your cake is ready is to insert a wooden toothpick and if it comes out clean or with very few crumbs, the cake is ready!
Let the cake to cool down before decorating
If using white chocolate to decorate:
Melt the white chocolate in the microwave
Drizzle on top of the cake
Add sprinkles, or your favorite decoration
Let it to cool down
